Job Purpose / Objective: Under the supervision of the nutrition manager, the Head cook is responsible for the overall implementation of the hospital feeding program for in patients in Kakuma refugee camp.
The task will involve direct supervision of all the incentive cooks, stock monitoring of supplies, reporting on consumption and maintaining hygiene and cleanliness, daily updating of food supplies, monitoring all the supplies, planning meals according to the ration scale provided, overseeing the cleanliness in and outside of the kitchen area and organization of program supplies and equipment.
He also ensures the quality of the food and overall patient experience in line to donor requirement.
Key Responsibilities / Job Tasks:
Reporting daily food consumptions, meal planning according to ration scales provided
Ensuring overall food quality from supply distribution and consumption by patients Supervises, delegate and monitor the incentive cooks hired in the IRC main hospital.
Responsible for maintaining the highest standard of sanitation in food handling and in the work area
Supervise and coordinate activities of cooks and workers engaged in food preparation including work rosters for the staff.
Requisition of food and other supplies needed to ensure efficient operation.
Participate in recruitment and hiring of staff, including cooks and other kitchen workers.
Arrange for equipment maintenance, purchases and repairs.
Demonstrate new cooking techniques and ensuring the quantity and quality of diets. prepared in liaison to the nutritionist guidance for the specific cases.
Ensures inclines and hygiene and maintaining inventory of equipment and utensils reporting breakage of the items under his/her custody.
Ensuring that all the food handlers working in the kitchen are screened and their documentation filed.
Ensure that general and personal hygiene is adhered to by all the kitchen staffs to as per the rules and regulations of public health.
Ensuring safety of supplies, preserve and protect any property of IRC that may be under his/ her custody or come to his/her possession in the course of work.
Obtaining and seeing to the appropriate use of equipment, facilities, and materials needed to do certain work.Required qualifications:
Diploma in Catering hotel management, food production from a recognized institution in Kenya.Required Experience & Competencies:
Well versed in planning menus, establishing size of food portions, estimating food requirements and costs, and watch and order supplies
Experience in managing supplies in a medium to high volume hotel/restaurant with good report writing skills
Highly experienced in performing food quality inspections to ensure that all food items conform to hygiene standards
Knowledge of preparing different types of diets.
Track record of following best hygiene and sanitation practices aimed at providing quality food services
Absolute flexibility result oriented and ready to work in a highly demanding environment
Strong background of handling kitchen functions such as supplies and inventory management and cooking staff schedules and records
Able to maintain accurate inventory and records of food, supplies and utensils.Kenyan nationals are encouraged to apply.
